vegan cream cheese in a bowlI grew up in my mom’s deli store called The Cheese Shop of Vail. So I have had an intimate experience with cheese since I can remember. Going vegan meant that I would have to give that up, or so I thought. Over the years I have had some really great vegan cheese, usually at a vegan restaurant. Then I got the cheese issue from VegNews and things took a nice turn, I am now making a variety of cheeses that are relatively healthy and delicious.

This recipe is really easy and I recommend it before you try making any other vegan cheeses. In relation to regular cow milk cream cheese the flavor is pretty much the same. You will get 60 more calories per serving with the Cashew Cheese. There are 2 grams more fat but its mostly the uber healthy monounsaturated fat which you need more of anyway. There is no cholesterol in the Cashew Cheese, the sodium is almost a third lower, and you get 6 grams of protein as opposed to the cow milk version which only has 2! So now you can tell people where you be getting your protein from!

Who doesn’t love pizza? Its food laid bare for all the senses to experience: sight, smell, taste, touch. However if you have a gluten intolerance it can be a painful experience to eat a regular wheat flour pizza. Kate and I dont have an allergies that we know of to Gluten but wanted to give a Gluten Free pizza a try. Plus I had recently made some Vegan Bufala Mozzarella and this was a perfect excuse to eat some up!

I know what you are thinking: How can you make vegan cheese? Don’t we have to force cows into yearly pregnancies and then separate them from their child so that we can pump them for all the milk we can consume?

No you don’t. You can have the taste and texture of cheese without having to harm any animals. Let me tell you how.

Bread is one of those things that you dont think of as harming animals but there usually is cow milk and butter in most loafs. Finding a recipe that was both vegan and bread machine worthy took some searching. I found a few recipes and put this together. I play around with the types and quantities of seeds. Chia’s seem to be getting really expensive so its been more Hemp and Sunflower lately.

Morning time is breakfast time. My favorite breakfast is a smoothie as they are quick, easy, and full of everything my mom always said I should eat. Obviously you need to have a blender to make a smoothie and just about any will do. However I suggest making an investment in this particular appliance as you may be like me a use it multiple times a day. I have burned through a few blenders and always knew I needed to step it up and get a Vitamix(yes this is an affiliate code, if you buy one after clicking here I get some bread, and I like bread, you dig?). Yes $400+ for a blender is a lot when compared to other blanders, but how about compared to your stove? Anyway thats my sales pitch today back to breakfast.
Over the years my breakfast smoothie has evolved considerably. When I first started as a vegetarian a few years back I discovered a few posts from Steve Pavlina and learned about banana and spinach smoothies. Personally I love these things but my wife is not such a fan. They are green and taste somewhat bland which apparently is not everyones favorite flavor
So I evolved and started adding a few different ingredients to help round out the flavor profile and balance the sugar level. Today I have a base of ingredients that make up most of my smoothies and then I will add whatever I like or whats around. The recipe I made today is pretty typical but I totally spaced the half an orange!

Yes! We have arrived!

Who are we and why are we here?

Well to start its just me, Roger, at the moment, and I am here to tell you how and why I am a vegan. My goal with this website is to show people how they can live a healthy happy life without having to kill animals. I don’t want to preach and tell you that its my way or the highway. Rather I just want to show you how I live and mostly eat and hopefully that inspires you to do the same.

My goal will be to show you how I come up with what to eat, why its healthy, and then how to make it. Most of these recipes come from other recipes and then I put my spin on them just cause I like to mix things up a bit. I also want to show you how to find inspiration for different meals and keep yourself interested in what you are eating.

Being vegan gets a bad rap for bland tasteless food but it doesn’t have to be that way. While there are times where I eat things that are simple and quick I always try to add some extra flavor to brighten things up a bit.

I am also hoping to get your feedback on things. Talk to me about what you think of the recipes. Tell me how yours turned out, and most importantly ask questions.
